Pure Vanillas - Category I

PURE VANILLA EXTRACT - Single fold plus
Cold direct extraction of 100% Bourbon Madagascar Prime Vanilla Beans produces vanilla with a truer, richer flavor without loss of delicate aromatics. Use 4 to 5 ounces per 5 gallons of ice cream mix or to 50 pounds of icings, cakes, creams etc.

PURE VANILLA EXTRACT - Two fold plus
Cold direct extraction of 100% Bourbon Madagascar Prime Vanilla Beans at the rate of 1.66 pounds per gallon of extract. Use 2 to 2½ ounces per 5 gallons ice cream mix or to 50 pounds of icings, creams, etc.

Vanilla - Vanillin - Category II

TWO FOLD VANILLA VANILLIN
Single fold pure vanilla fortified with 1 ounce American made vanillin. Use 2 ounces per 5 gallons of ice cream mix or to 50 pounds of icings, cakes, cream, etc.

FOUR FOLD VANILLA VANILLIN
Two fold pure vanilla fortified with 2 ounces American made vanillin. Extremely popular with ice cream makers. Use 1 to 1¼ ounces per 5 gallons of ice cream mix or to 50 pounds of icings, cakes, creams, etc.

Natural and Artificial Vanilla Blends
Category III

VANILLA BEAN MARINADE
This award winning vanilla is made from our pure vanilla extract, American made vanillin and 100% Bourbon Madagascar Vanilla Beans added to each gallon at 1/3 pounds beans per gallon. This vanilla flavoring concentrate is then aged for a minimum of three months which allows the full flavor and richness of the vanilla pods to develop the flavor. Equivalent to a 2-fold vanilla. Excellent in ice creams. Use 2 to 2½ ounces per 5 gallons of ice cream mix or to 50 pounds of icings, cakes, creams, etc.

MELIPONE MEXICAN VANILLA
An authentic 75 year old Mexican Vanilla formula. Typical rich and creamy Mexican vanilla. Use 3/4 to 1-½ ounces per 5 gallons of ice cream mix or 50 pounds of icings, cakes, creams, etc.

NATURAL & ARTIFICIAL VANILLA EXTRACT
Blend of Pure Vanilla Extract and American made vanillin. Use 2-½ ounces per 5 gallons of ice cream mix or to 50 pounds of icings, cakes, creams, etc.

OLD-TYME VANILLA 2X
A distinctive old-fashioned style vanilla for soft serve ice cream. Contains pure vanilla. Use 2-½ ounces per 5 gallons of ice cream mix or to 50 pounds of icings, cakes, creams, etc.

ICING AND CAKE VANILLA 16X
A water clear concentrated vanilla. Use 1/4 to 1/3 ounce per 50 pounds of cake batter, icing or other food products.

VAN BLANC VANILLA 6X
A sweet, multifold imitation vanilla used in cakes, icings and frozen desserts. unique fullness and flavor. Use 2 to 2½ ounces per 50 pounds.

CANDY VANILLA
Sweet vanilla used by many praline makers in New Orleans. Retains flavor well because of unique flavor enhancers. Use 1-½ ounces per 50 pounds.

IMITATION VANILLA EXTRACT
Flavorful, inexpensive all purpose substitute for Pure Vanilla Extract. Use 4 to 5 ounces per 5 gallons of ice cream mix or to 50 pounds of icings, cakes, dough, creams, etc.

ALMOND EXTRACT
Made from pure, imported Oil of Bitter Almond. Excellent in candies, cakes, cookies, icings, etc.

AMARETTO EXTRACT
Made from our Pure Vanilla Extract, imported Almond Oil and other natural flavors. Use 4 to 5 ounces per gallon of mix or to 50 pounds of icings, creams, etc.

ANISE EXTRACT
Made with imported Chinese Anise Oil. Use to taste in candies, cakes, cookies, icings, etc.

EGG NOG
A delicious old-tyme egg nog flavor. Available with or without color. Use 4 ounces per 5 gallons of mix.

HAZELNUT EXTRACT
A delicious natural Hazelnut flavor. Use 3 to 4 ounces per 5 gallons of mix or to 50 pounds of icings, creams, etc.

MAPLE #20
An authentic “mountain” maple taste. use 2 to 4 ounces per 50 pounds of food product.

NEW ORLEANS SWEET CREAM
This unique, delicious creamy flavor is used to enhance vanilla, chocolate and many other food products. Add sweetness and roundness and is used in many Italian styled flavors for ice cream and pastries. Request special usage instructions.

PEPPERMINT EXTRACT
Made from Re-distilled Oil of Peppermint, USP. Clean and mild menthol freshness and herbal leafy notes. Use to taste in confectionery products.

PRALINE #25
A favorite New Orleans flavor. Real praline taste. Use 4 to 5 ounces per 5 gallons of mix or to 50 pounds of icings, creams, etc.

RUM #10
Typical old Caribbean Rum flavor without any charred taste. Use 2 to 4 ounces per 5 gallons of ice cream mix or 50 pounds of food product.

RUM #500
A delicious full-strength rum flavor. Excellent in chocolate, cakes, cookies, pralines and sweet dough. Use to taste. Golden color.

RUM #501
Same as our Rum #500, but caramel colored.

WINC BUTTER FLAVOR
New Orleans’ most popular butter flavor for over 25 years. Use 4 ounces per 100 pounds of icings, cake batters, cookies, etc. Use 6 ounces per 100 pounds of shortening for roll-in.

COCONUT BLANC
A clear, concentrated coconut flavor. Use 4 to 5 ounces per 5 gallons of mix or to 50 pounds of food product.

Natural Flavor Emulsions
All emulsions are made with the finest natural oils available and without any dispersing agents, insuring a true, clean flavor.  Our unique formulation avoids any separation.  Other emulsions can be made upon request.

PURE ALMOND EMULSION
Concentrated imported Almond Oil flavor for great Amaretto type taste. use 3 ounces per 5 gallons mix or 50 pounds of food product.

PURE CINNAMON EMULSION
Made from imported Natural Cassia and Cinnamon Oils for that authentic cinnamon flavor. Recommended use is 1 ounce per gallon of ice cream mix with ½ ounce of pure vanilla extract.

PURE LEMON EMULSION
This pure lemon flavor is 4 to 5 times stronger than ordinary lemon extract. Use 1 to 2 ounces per 5 gallons of mix or 50 pounds of food product.

PURE LIME EMULSION
Made from imported Lime Oils. Fresh-squeezed real lime taste. Great for pastries and pies. Use 3 to 5 ounces per 5 gallons of mix or 50 pounds of food product.

PURE MANDARIN EMULSION
Made from folded terpenless imported Mandarin oil. The freshest of all citrus flavors. Use 1/2 to 3/4 ounces per 5 gallons of mix or 50 pounds of food product.

PURE ORANGE EMULSION
Made from cold-pressed, 5 fold Florida Sweet Valencia Orange Oil. Fresh, flavorful orange taste. Use 3 to 5 ounces per 5 gallons of mix or 50 pounds of food product.

PURE TANGERINE EMULSION
